The first quarter is dedicated to the topic of purpose and with that in mind Rosie’s first guest is Ewelina Konyndyk, a Life Coach for Polish born immigrants in the US. As a first generation immigrant from Poland, she is the Life Coach she needed when she came to the US. In her practice she helps clients develop relationships with themselves based on self love, compassion and self awareness. She teaches them to develop tools to manage the mind and emotions. Clients quickly shift from feeling discouraged, disconnected, insecure and overwhelmed to calm and empowered.
To understand how Ewelina became a life coach Rosie asks Ewelina to share a bit of her personal story. In January 2005, Ewelina immigrated from Poland to Michigan to work as an au pair and travel across the US. The plan was not to stay in the US. However, while in Michigan she met her husband and things instantly changed. She felt a very special connection with him and just knew she had to stay. She expected for things to just fall into place, but they didn’t. She struggled with living in the US even with a supportive husband and job in photography she loved. She struggled with finding her identity in the US. She resented not being able to use her graduate training as a Polish Language teacher. She had a clear vision of who she was and would become in Poland, but no clear self identity in the US. Her life was not unfolding as she imagined it. This tension caused years of suffering. Deep inside she felt confused, ashamed, and angry. Rosie shared that she could relate and holding on to one’s ego prevents them from appreciating the many opportunities available to one in the US.
The turning point in Ewelina’s journey was when she decided she had to return to Poland. While her husband and his family were supportive, it was a tough decision. She felt that if she could just return home things would become clearer. If she could just meditate in Poland, then she’d get the answers she needed. She sold her car, quit her job and purchased a one-way ticket. Then, after two weeks of mediating and seeking answers she got an answer. And it was to return to the US! This only caused her to go deeper into crisis. Now, she began to question her higher guidance, not just her identity. She did not return to the US but instead stayed in Poland living with her grandmother for three months. Eventually she met with a healer. Sure enough the healer told her to return to the US! In 2011, she returned to the US not only to her husband and his family but to a job she had prayer for. Rosie shares that it is so important to write down our desires and be specific in what you want.
Today, Ewelina believes that her journey was filled with unnecessary drama and could have been avoided if she had a good life coach. She was confused and needed clarity. She needed someone who would ask deep questions and not stop pushing when the answer they hear is “I don’t know.” Becoming a life coach happened naturally. She has always been a great listener, the person people confided in, and into self-improvement. So, she took upon herself to become a certified life coach. She obtained her most recent certification in March of 2021 though she has been a certified life coach for years. Ms. Terreforte is the creator and founder of Latinas on the Go, a women empowerment movement, focused on promoting professional growth, leadership, and change within our Latino community. Sarahi also serves on the Hispanic Chamber of Commerce Board of Directors, striving to progress in all efforts within the growth of our Tampa Bay community. Ms. Terreforte is passionate about helping the community and creating a difference in people’s lives.
Being in a real estate career you need to be genuine and honest. You need to help the family and not just sell but also assist, advise, and guide them through the whole process of purchase. It needs work of ethics, integrity, and knowledge of what you are doing.
Sarahi prayed and waited a long time before she created Latina on the Go, which she needed for her community. She created it because she experienced being underestimated as a Latina millennial.
The mission of Latina on the Go is to open a new platform for aspiring and stable women, promoting leadership and professional development and change. Not just in women but also in giving back to the community, reaching out to events, and donating to non-profit organizations.
She said that “there is nothing more fulfilling than giving back to those who need it.” Being a commissioner on the status of women, she will be a voice for empowering women in her community.

Disability has never been a hindrance to success. Many people take it as a challenge but it’s never a hindrance to reaching what you dream. An inspiring story from Johana Apolo’s life makes us wonder about and believe in our potential capacity. Every one of us has our struggles, but it will be ours to tackle. Together with Rosie Paulsen in this episode of Cafecito with Rosie.
Johana Apolo was born in Ecuador. She was diagnosed with bilateral optic nerve atrophy when she was 7. A virus attacked her optic nerve and caused severe damage to her sight. Her family immigrated to the United States when she was 14. Moving to the United States was certainly a culture shock. She neither spoke nor read English. But she immediately fell in love with the United States and all the opportunities here.
She was determined to succeed and kept looking for opportunities to advance herself. Johana never let obstacles get her down and keep her from succeeding.
Her passion is to inspire and motivate those struggling in life due to vision loss. She founded JOJO’S SIMPLE LIFE COACHING, which empowers men and women with visual impairments to break through their barriers and become independent! No one should go through hardships alone.
Networking and collaboration are very simple concepts. We can work with each other as a community because we never know who’s going to need someone like you and your service. Johana Apolo said, “it is not what you can get out of it, it is what you can contribute to this group of individuals that together we will make a difference that will impact our community, attitude and legacy.”

Reading feeds our minds and soul. In this episode of Cafecito with Rosie we will hear an inspiring story from an excellent writer and journalist, Shirley Jump.
Shirley Jump is a New York Times, Wall Street Journal, Amazon, and USA Today bestselling author who has published more than 70 books in 24 countries. As the owner of JumpStart Creative Solutions, Shirley also does book building, content editing, ghostwriting, and author coaching.
As a former reporter and communications director for a marketing agency, she uses her diverse background to help clients create impactful content that opens up new revenue streams.
She shared that in collaborative writing it is important to listen to your client. Being a journalist, you need to share your ideas with your group. Jump sees everything around her and believes that “every one of us has a voice story to tell and share that to other people.” We have a purpose in life and part of that is communicating our story.
She believes you need to trust yourself and not worry about things too much, everything will work accordingly. Embracing yourself for who you are is your biggest asset.
As the show ends, Rosie shares that “you are the biggest asset.” People cannot live without you, you are unique, and necessary you are created with a purpose.

He is known for his passion for writing, speaking, diversity & inclusion, and the Latino and Deaf communities, as he spends the majority of his time serving there. Joe has a passion for learning as he has completed three degrees and is in the process of completing another. He is a published author with over 25 years of leading, ministry, sharing, and teaching all that he has learned through his experiences and his faith.
Joe believes in “authenticity, being real, facing whatever challenges you have, giving credit where credit is due, and that no man is an island”.
Discrimination of physical appearance also affects him. But his experiences, have taught him to be more confident in himself and understand the differences between different people with different cultures and behavior. Now, he helps others go about improving themselves and their businesses, and helps them to become more progressive.
Joe Lugo said, “Being authentic and being who you are very contagious”. It can damage trust and bring doubt to the people if you are true to yourself. It will impact others to know who you are and identify your leadership, potential, and attitude. As well as affecting your business, because the treatment of the customers is very important and customers deserve the best of the best.

T. Edmund Spinks, the founder of Spinks Law Firm, has been practicing law in the area of elder law, social security, veteran’s benefits, and disability law for 20 years. Before practicing law, Mr. Spinks joined the Army as a smoke operations specialist and served in the Gulf War as a nuclear, biological, and chemical sergeant. Following his service in the Army, he was trained and certified as a firefighter and emergency medical technician (EMT) in Florida. He was employed by the Polk County fire department, where he became one of the founding members of the local FireFighter Union, IAFF 3531.
It’s important that while you’re still young you need to plan ahead, because we cannot predict what opportunity is ahead of us and we need to prepare for the worst ahead of time. The best time to plant a tree is 20 years ago, the next best time is now. Its the same with estate planning. The capacity to understand is a very big deal as Edmund said. Disability can happen and when it does, do you have a plan to take care of yourself? Planning for the unknown is a challenge, but it doesn’t need to be. Dr. Nehal Gheewala, Associated Chief Medical Officer with Dedicated Senior Medical Center, provides tips every senior needs to optimize both health outcomes and satisfaction with their doctors. Dr. Gheewala has always had a passion for working with aging patients. These experiences inspired him to pursue a career as a geriatrician. “I always advocate for my patients,” says Dr. Gheewala. “I pride myself in managing chronic diseases while maintaining my patient’s mobility, reducing their medication burden, and avoiding hospital stays.” He often gives out his cell number as do many of the doctors at the Center. The elderly patient population often want to spend more time with their doctor and Dr. Gheewala finds ways of doing that. Answering a call or sending a text develops a relationship with his patients, which in turn aids in improving their health.
In this month of June, Dr. Gheewala and Rosie talk about heart disease and specifically risk factors for this disease. The heart does change as we age and there are risk factors associated with heart disease. Heart disease is one of the leading causes of death in 65 and older, both men and women. Most heart conditions fall under coronary artery disease or CAD. CAD causes heart attack, heart failure, chest pain, and irregular heartbeats. When he sees new patients he does a complete physical head to toe and listens to their heart and lungs,and looks at their skin, legs and neck. This can tell me a lot about how the heart is functioning. Ask them about their symptoms - what makes things worse or better. There are risk factors so we look at high blood pressure, diabetes, trouble with kidneys, and cholesterol levels. All this relates back to diet. So, zooming out is key. Asking lifestyle questions is necessary. How often are they walking? What are they eating? Answers coupled with the patient’s symptoms aids him in treating patients and determining if lab work or imaging is necessary. Doctor and patient work together to determine next steps. This relationship is “sacred” and guides the best outcome. At the Center, doctors focus on this heavily.
Preventive medicine is a highly recommended practice for everyone. How do we stop things from happening? How do we slow things down so people can have more health days and less sick days? Avoidance of anything that could be causing the problem is necessary such as poor dietary habits, smoking, lack of exercise, and other risk factors. Dr. Gheewala says we can stop things before they happen. That is the secret sauce in all of this he says.
Rosie shares that there are Medicare insurances that are specific to this type of disease. These are called chronic conditions plans but not all insurance companies under Medicare will offer them. As an insurance broker, she completes a health risk assessment form on clients and submits it for review. A physician verifies the form and signs off on it. The relationship between the patient, doctor, and insurance company is important to make sure that people in the community are taken care of.
In closing, Dr. Gheewala shares tips for taking care of our hearts. Staying active is number 1. Make sure you are exercising every day - get your blood flowing each day. Walking 30 minutes each day is important. Watch what you eat. Control your portions and avoid fried, fatty foods. Make your meals at home and cut out salt in our diet. The rule of thumb is wherever salt goes, water does. Salt can cause swelling. Look for sodium on nutrition facts, not just salt. Stop smoking. Watch your cholesterol too. See your doctor frequently. This relationship is key.

Today, Dr. Susan Truong and Rosie will talk about the purpose of life and how important it is to the optometrist. Dr. Truong and her family immigrated to Florida in the mid-1970s from Vietnam, with almost no money and unable to speak English. Her parents impressed upon her and her four younger brothers that education is a way out of poverty. Susan’s determination, hard work, and talent led her to where she is today: a successful optometrist with multiple practices, who has been featured in magazines and news articles. Now, she dedicates her life to leading others to SEE BEYOND 20/20, helping them better live into their vision, which helps them transform that vision into reality.
Her life is an example of being in the right place at the right time, making the most of your opportunities while things are happening, persevering through adversity, and meeting challenges with gratitude. She’s passionate about empowering people of the world to have clarity and live a life beyond 20/20. No one said that your vision has to stop at 20/20. Your vision should be so big that it scares you. If this poor girl from Vietnam can do it, then so can you!”
Dr. Truong believes “a patient is not a set of eyeballs sitting in my exam chair” they have their purpose in life. Most people are just existing, but existing is not living and we get One chance, One Life, and One time to make a difference. You should wake up everyday and ask yourself “Am I going to make a difference today? And how am I going to do it?
In life, we are not everybody’s cup of tea, we can overcome this by having confidence within ourselves, knowing our purpose and our core values. Dr Troung added that “Each of us has been anointed with our own unique gifts” that we can use to impact the people around us. This show is about inspiring others to be the best that they can be and if you have not found your purpose yet, then start somewhere. If you feel like you are just existing, then Dr. Truong recommends starting with your Why? (If it doesn’t make you cry, it’s not your Why.) Why do you wake up everyday and do what you do? Rosie suggests that your Why should scare you but not stop you.
Rosie and Dr Truong remind us that being thankful is important. You should live your life with an attitude of gratitude. Start each morning by opening your eyes, and then quickly list in your head 3 things or people that you are grateful for this sets the tone for the rest of the day. Rosie reminds us that “ when you become or are aiming to be a leader in your community, try to remember that people are more attractive to a positive person”. Start with a positive attitude because it is a choice. Start with gratitude, positivism, loving yourself, and be grateful for your circumstances whatever we do and everything will follow accordingly. You were created for a purpose that only you can fulfill.
